This 3 days + 1(designing video) course by Polka Dots Cakes Academy will give you the practical skills and personal confidence needed to create stunning 3 tiered stacked cakes, designed to teach you the principles of assembling and decorating a stacked wedding cake.
We shall work with: Eggless Swiss Meringue Buttercream, Ganache and Fondant.
Designing: In the course, you shall learn how to draw inspiration, create mood boards and sketching your cake. An entire online class will be dedicated to this process
Cake Carving: Carving n Frosting Octagon Cake, Cylindrical Cake (round cake), Tall cakes.
Covering with different mediums: Fondant Draping, Buttercream application, Ganache with sharp edges
Wafer Paper Floral elements: Wafer paper flowers, leaves and adornments
Techniques & decorations: Not limited to just these: Textured looks, mixed media, reliefs, hand painting, gold/ silver leafing, masking techniques, airbrushing, couture lace work, Billowing, Shimmering laces, stenciling, Crackling, ruffles, metallic shimmer, vintage custom frame methods, painting, antique effect, wafer paper texture, isomalt decor etc., just to name a few. Basically, no limitations to techniques.
Dowelling: You shall also learn to securely stack and transport tall cakes. The technique of tiering that you shall learn is sturdy enough to transport your cake in 1 piece up till 10 tiers.
Cake Business: Professional Cake photoshoot done by professional wedding cake photographers (not learning photography, they shall click pictures of your cakes and provide all to use for your portfolio, personal websites, digital marketing etc.)

At the end of class, you’ll have the technical know–how to build strong cake structures and the decorating techniques to finish them artfully. You will go home with an elegant 3-tier wedding cake and the ability to make cakes with any number of tiers.
All class material shall be provided for class use.

Food: Basic Vegetarian lunch and AM/ PM tea shall be provided. Any specific dietary requirements to be addressed by themselves.

This class is a decoration based class. We shall keep sponges baked n ready for the students to use in the class.
